With simple quick-pickled carrots & daikon (get out your mandoline to julienne with ease), a good crusty roll, and some pantry staples, this sandwich comes together quickly & is a super refreshing use of leftovers.
Try it with whatever meat you roasted for Easter dinner, or do quick marinated & pan-fried tofu for a vegetarian version. A little salad on the side, and dinner is complete.
